How to make idli
Idli – steam boiled rice cake. Very rich in
carbohydrates and proteins. Easy to make especially and safe food for all even
during illness. In southern India, children are weaned onto idlis as their
first solid food.
INGREDIENTS:
Boiled rice 2 cups
Urad dal 1/2 cup
Fenugreek seed 1/2 teaspoon
Salt
as needed
PREPARATION:
Soak boiled rice and urad dal in a bowl for
at least 4 hours. (Warm water will reduce the soaking time)
Grind the soaked items in stone grinder (or
with a high powered blender can also do the job) although the batter should be
more coarse in texture for smooth outcome.
Set aside in a warm place to ferment for 8
hours. Use your hands to mix the ground batter for best fermentation. Keep
it in warm condition till fermentation.
Add salt
Oil the idli steamer plates
Fill the batter into the plates
Heat the idli pot with water before laying
the plates inside.
Steam the closed pot for 5-10 minutes or
until fluffy.
If you don't have idli plate, you can also
use small cups or plates to steam Idlies
Remove the idlis from the steamer and serve
warm with Chutney, or Sambar.
